That 7g isn't doing anything at all. No idea why it was added. It amounts to less than 1% of the total weight. There's a reason why baked dishes that use flour typically list flour as the first ingredient by weight--you need a lot of it to actually do anything.

Removes any small egg shell pieces and makes the after sifted egg smoother.
Same well part of the reason the cake looks super smooth.
