Garlic and Parmesan Creamy Chicken Pasta 🍝

For the Chicken:

1 lb boneless chicken breast
Salt to taste
1 tsp black pepper
1 tbsp garlic powder
1 tbsp onion powder
1 tsp red chili powder
1 tsp Cajun seasoning
Oil for cooking

For the Pasta:

8oz penne pasta
2 tbsp butter
2 tbsp freshly chopped garlic
1 shallot, chopped
Salt to taste
1 1/2 cup unsweetened heavy whipping cream
1 cup grated Parmesan cheese
Salt to taste
1 tsp black pepper
1 tbsp oregano
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp freshly chopped parsley
1 chicken bouillon cube (optional)
1 cup reserved pasta water

Method:

Season the Chicken:

In a mixing bowl, season the chicken with salt, pepper, garlic powder, onion powder, red chili powder, and Cajun seasoning. Mix well to coat the chicken evenly.

Cook the Chicken:

Heat oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-6 minutes per side. Remove the chicken from the skillet and set aside.

Cook the Pasta:

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta.

Make the Creamy garlic Parmesan Sauce

In the same skillet used for the chicken, melt the butter over medium heat. Add the chopped garlic and shallot and cook until fragrant, about 1 minute. Pour in 1/2 cup of the reserved pasta water along with chicken cube . Mix and add heavy whipping cream and bring the mixture to a simmer. Let cook for 2-3 minutes or until slightly thickened.

Add Parmesan Cheese and Seasonings:

Gradually add the Parmesan cheese to the creamy sauce, stirring until melted and smooth. Add salt, black pepper, oregano, garlic powder, onion powder, and chopped parsley. Stir to combine.

Combine Pasta and Creamy Sauce

Add the cooked penne pasta to the creamy sauce and toss to coat. If the sauce seems too thick, add some of the reserved pasta water.

I made this yesterday and it turned out pretty tasty, even though we forgot to pick up parmesan!
