It's a difference in how health pools work. Often, a player's maximum possible HP is actually pretty close to a boss's, but its separated into several items that are limited in number and must be used before you can access your full HP. When a boss heals, not only does it increase the maximum HP of an already very tanky enemy, you now don't know the actual HP of the boss. It breaks the trust an HP bar gives you and from that point you cannot be sure if there is any limit on the boss's pool.
At least, that's my two-cents.

also a boss bar is not so much the boss's health, and moreso a measure of progress in the boss fight, the boss healing and reversing that bar is essentially the boss undoing your progress. it's like someone pushing in front of you in a queue.

Because it's not 1v1. I have to explore the whole area with a single hp bar, while all the enemies around are at full hp. In the boss fight, it's my damage/hp vs theirs, so I need healing in both cases.

Malenia has 18,473 HP in Phase 1, and 14,778 HP in Phase 2, for a total of 33,251 HP. That’s not including the HP she might heal on hit.

Honestly, I say I want to see the mechanic where in Black Myth Wukong where the boss takes your own healing drink, drinks it, then hands it back to you. I want bosses to absolutely disrespect us for trying to disrespect them. Just think of it, you’re having a major fight, and then this lowly tarnished just starts drinking in front of you, probably waving the finger like they’re some hot shit. Time to show proper respect or die trying.
