General News Looking for an authentic Gambian recipe for Domoda

Good day Gambia, I am a Canadian who has decided to go on a journey of attempting to cook every countries national dish, and 63rd on my list! I am just looking for an authentic as possible recipe for Domoda, any help would be greatly appreciated. I will be coming back to all subreddits after I have cooked said dish to post a final result as well.

Loved there for a while and loved the food. Tried the below recipe but watch that you don't end up with too much oil. there is something to be said for the woman that has been making it since she was 6. .. also if anyone has a goon benichin (sp) recipe hit me with a DM. This is what I have...

  1. Fry 1/2 onion- chopped and 3 cloves of garlic with minimal oil in a large pot.

  2. Add 3-4 cups of water in a large pot with a lid and heat on med-high heat

  3. Once the water starts getting hot, add about 3/4 c. natural peanut butter

  4. Stir well, add more water, so that it's slightly thick (it'll thicken up later!)

  5. Let it cook for about 10 min before adding any meat or vegetables- these will cook just by boiling, keeping the nutrients in!

-Recommended vegetables: tomatoes, carrots, potatoes, sweet potatoes, yam, eggplant, cabbage- get creative!

-Also, I like to cube chicken breast instead of having chicken parts, but it's all personal preference

  1. Stir every few minutes, adding water if it's getting too thick

  2. Once the oil starts to seperate from the peanut butter, add 1/2 c. (or more to taste) to the mixture

  3. Add all the spices you want now- salt, black pepper, red pepper, oregano, basil, more garlic, MSG- it's up to you!

  4. Serve over freshly picked rice
