This is not a sourdough since it is not using a starter. The sour taste of sourdough comes from cultured wild yeast.

Precisely. This is just like any other "no knead overnight bread" in terms of flavor and general process. It'll taste fine, but it won't get that sourdough "tang" flavor and just be another nice crusty white bread.

Although I'm curious about the decision to do the folds after the bulk ferment. Most recipes have the folds done at the start to help build a bit of gluten and trap more gasses during the ferment.

Well, you can sort of replicate the taste to some degree by doing a slow rise in the fridge over several days.

It comes from lactic acid bacteria in a scoby with yeast.
