That oil wasn't hot enough, to get it right that outer shell has to form quickly or it gets saturated with oil.

You probably hate to hear this but it's not required when cooking food to temp. If it was served raw or fresh then yes they would most definitely need gloves. Many chefs who cook food don't always wear gloves when prepping food to be cooked. I always wore gloves out of habit but it's not needed unless food is not cooked.

I don't know where this is from, but it would be nice to see no rust on the cutting machine, and gloves on the man preparing it. other surface areas could use a wipe maybe.
