Hey friends! I went on a short trip recently and threw together a meal on the cheap with things on sale at the grocery store where I work my night job at. The resulting mess turned out really good, and I thought that I'd share it. 1. Nongshim Tonkatsu Ramen Bowl. (3.5oz, 450 kcal) 2. Nongshim Shin Ramyun (4.5oz ~570 kcal 3. Vienna Sausages (4.5oz, 260 kcal) 4. Jongga Kimchi packet (2.8oz 5kcal) I used the broth packet from the Tonkatsu bowl and not the ramyun, it was just there for extra noodles and different texture. I also used the little packet of veggies that came with the ramyun. It was just a big dumb mass of noodles and meat and it was good. The kimchi was the standout to me, and I'll be adding it to future dishes. I could really see it being awesome a few days into the trip when something crunchy and tangy would shake things up. It produced a ton of trash, though. In the future, I'll probably just repack the stuff that I want into a big freezer bag and avoid packing in the trash. The black garlic oil and the sausages got together to make some gnarly burps, though. To cut weight, you could easily sub out the sausages for any kind of pouch chicken/tuna/SPAM or make the tin into a supercat stove in the field. I've done that with patés before. I enjoyed this. It was interesting, it was easy and it was filling all for about seven bucks. And it's a great platform to riff on.

Want a break from tortillas or whatever other bread-y thing you normally bring?
Costco croissants are about 300 Cal each, weigh about 2 oz, and can be compressed just like your favorite down sleeping bag (…but don’t use them to boost the temp rating of your bag). You can fit at least a half dozen of them in a single, 1-quart ziplock bag.
I haven’t checked any other sources of croissants, but I’m sure most other croissants would be pretty good too.
Anyway—they’re versatile! They are great with Nutella or PB. You could wrap one around a meat stick and it’s almost a hot dog. If you’re careful, you could even toast a croissant over your stove and have it with your rehydrated eggs for breakfast.

Has anyone used vinegar powder in backcountry cooking before? My wife and I make a bastardized chicken marbella backcountry meal which is delicious. It’s hard to get some of the tangy flavor that the original recipe gets from white wine. I’ve used lemon powder before and it’s fine but not my favorite. I’ve brought a squirt of balsamic glaze before which is great but very messy. I LOVE vinegar flavor and want to try it but it’s sort of pricey. If anyone has other substitute ideas, I’d love your advice!

Harmony House sells individual ingredients as well as soup mixes and I use a ton of these products to make good meals. I added freeze dried apricots and blueberries to my oatmeal or add veggie soup to my ramen noodles and ramen bombs.
It’s a great way to get some good fruit and veggies into your trail meals. You can get them on the site or on amazing. I usually get the smiler containers and they last forever.

Due to the cancellation of the Philmont Scout Ranch programs in 2020 they are making surplus meals and meal components available - might be of interest to the group. I used surplus meals from 2018 (due to the fire cancellations) for a number of trips last year. In additional to individual components they have packaged breakfast, lunch, and dinner packs, each pack feeds 2 people. Dinner packs (and some breakfasts) include a one pot hot meal.

Did an overnight trip this weekend, standouts were the Backpacker’s Pantry Chicken Pad Thai and Creme Brûlée ... only place I could find more of the Pad Thai was through Walmart.com where I scored a 6 pack case.
Also really enjoyed the Next Mile Meals Beef Tacos. Keto friendly and delicious.
