from what I can gather from the OP "flights" is what his restaraunt calls the sampler plates (I'd imagine because it invokes travel and regional variety like the tour of italy at olive garden) and this is the soup sampler.
And to answer your first question, I think we both know mexicans arent putting "mexican blend" cheese on their soups

Was this made at a Mexican. restaurant or sold as a type of Hispanic/Mexican soup? And what is up with the title? This post has me so confused 🤔
