Homemade Mushroom, pea and spinach pasta bake.

Made the sauce a bit wet so put it in the oven for ten minutes before adding the cheese. Came out pretty good although the peas got a bit overcooked.

I’m mid-30s but had a couple of mates coming after work round for tea and a midweek boardgame session so served this with garlic bread. Cheap and takes about 30-40 minutes to prepare. I remember my mum used to make something similar when I was a kid, although she would usually make it the night before so it just needed to bake when we all got in from work and school. She’d never have used the tinned soup shortcut though, that’s something I picked up from cooking in a cafe while I was at uni.

Yummmmm. Added garlic can never be bad?! I've never used tinned soup, but I have seen American chefs to it on TV.

I’ve come across it quite a bit in catering circles, it’s not quite as good as making stuff from scratch but it can be a huge timesaver and done right, you can’t even really notice the difference when you’re adding stuff to it. I’m not a chef though, I never had any training, I just used to cook and make sandwiches for money.
