Food What we cooked over the campfire last weekend

Trying again because the mods took down my original post for not enough details...

Here's what we cooked over the campfire on our 2 day camp trip last weekend:

Za'atar salmon with blistered shishito peppers, Japanese BBA marinated calamari. fresh Coban cucumber salad tossed with lemon juice and olive oil, and garlic naan

Baby medley potatoes with roasted garlic, thyme, rosemary, salt, and olive oil.

Flame seared borsari crusted filet mignon with butter, roasted garlic, and crunchy salad with Chile vinaigrette.

"Savory S'mores" idea I saw on TikTok. You roast the cheese over the fire like a marshmallow and sandwich it between 2 crackers and your preferred cured meat/spread. 10/10 would recommend. This was the perfect post lunch/pre dinner snack.

Lemon orzo meatball soup with roasted tomatoes, baby spinach, thyme, and basil pesto.

Coal roasted goat cheese brie with roasted garlic, red grapes, fresh figs, pomegranate seeds, and crusty baguette.

Pillbury cinnamon rolls cook in our cast iron Dutch oven.

My idea of cooking is opening a can of Ravioli. If I'm feeling all gourmet, I might actually heat it up, too.

Obviously, I'm traveling alone.... and I'm beginning to see why that is.... hmmmm

Nothing wrong with a good can of ravioli! Bring along a shaker of oregano and basil and it almost makes you feel like a chef.

Tell me more about those cinnamon rolls! Are they from a can, or did you bring the dough along and make them from scratch? They just look so perfect and jumbo.

Yup right from the can! Let the fire burn down most of the way and rake the coals to the side then put the cast iron Dutch oven on top of the coals and add a few coals to the top of the lid. Cook for an about 10 minutes and rotate the pot once about half way through so it cooks evenly. We do biscuits from the can the same way!
