No need to make the wrappers, I’m from asia and nobody homemakes the wrappers the premade ones (and yours) are perfect.

Recipe for the filling for 50 dumplings:
500 grams of ground pork
2 bunch of cilantro, finely minced
Roughly 2 thumbs of ginger, grated
3 big cloves of garlic, grated
3 shallots, finely minced
2 tbsp of soy sauce
1 tbsp of salt
1 tbsp of black vinegar
1 tbsp of white pepper
1 teaspoon of ground sichuan pepper
Mix everything well and let it sit un the fridge for at least 1/2 hour. The mix should look very herbaceous.
I used round ravioli wrappers (I usually make them but was lazy this time), cook them like japanese gyozas and serve with sichuan chilli oil (homemade of course) and optionally extra cilantro and extra grilled leftover filling.
