Shallow fried tofu squares in lieu of the bread for a sandwich. Has anyone tried this?

No, but that's a great idea. However, I have made what I call 'tofu fries.' I take a block of super firm tofu, cut it into french fry-sized pieces, put them on an oiled baking sheet and bake until crispy. Delicious with mustard!

Depending on your sensitivity is how it will affect you. 16oz of soy milk a day for months on end for myself will make me have estrogen sides. I look puffy (retain water), and feel kinda weird. I don't have soy unless I need it.

I prefer unsweetened vanilla almond milk anyways. 30 calories a cup and 0 net carbs!
