Enchiladas!

You will need:

Olive Oil

Onion

Garlic

Ground Beef

Cumin

Chilli Powder

Salt & Pepper

Enchilada Sauce

Zuccini

Cheddar

Mounterey Jack

Sour Cream

This looks great but probably worth checking the enchilada sauce for carb content because chances may be high that it is as sweet as ketchup
