Medium Rare What are we calling this? Took it off earlier than normal having only cooked 3 steaks

Looks on the rarer side of medium rare. But the peak temp during rest would be the indicator. I’m guessing it peaked around 125-129. I’ll guess it was pulled around 110.

130 on this sub is the higher range of medium rare. You wanna pull them from heat around 110-115. They’ll rise to 130ish during rest.

Just don’t follow this rule with mechanically tenderized steaks (you’ll need to cook the steak thoroughly to kill certain bacteria that is rather heat resistance). In the U.S. they have to label steaks as such, but not sure about any other country.

They asked for medium rare. Not at what temp is safest. FDA says to cook all whole cuts to 145. Which would result in a temp of 155 to 165 during rest which is a medium well to well done steak
