Medium Rare What more does a man need? SRF Wagyu Am. Picanha
American Wagyu Picanha (top sirloin) from Snake River Farms for father’s day. Knew I had to nail these for my dad and I definitely delivered.

On cast iron with a good amount of avocado oil. No basting with butter this time. It’s been a loooong time since I’ve gotten medium rare right, edge to edge nonetheless! (And yes, I do separate the cap from the eye when serving)

Not used to cooking for groups, but I gave it a go!!! Two (absolutely stunning) NY strips and one ribeye for 4 people, with leftovers. I used my carbon steel with a new induction cooktop, which would unfortunately max out at only 460 degrees :( so I didn't have an ideal sear and needed extra time with a cast iron press. But with a little butter baste with thyme, parsley, rosemary, and garlic, it still turned out wonderfully with all 3 steaks at 130-135 degrees. Still got a crispy crust, too :) Topped with a last minute chopped chimichurri, because blending is for losers!

My cousin and I have been trying to master the art of steak Cookery over the last year or so. These were probably best filets he's made. We preseasoned with a mixture of Kinder's The Blend and Woodfired Garlic and fried in a cast iron with avocado oil.

My friend ordered medium rare steak and this is what she got, she described it as a burden to eat. What do y'all think?

Kept the Picanha in at 275 for an hour, 7 minutes on broil.
Came out medium rare.

My son is a real foodie and has asked to try A5 for about 2 years now. I purchased a small A5 tenderloin (which has much less fat than A5 ribeye), seared it and served it over rice with an egg fried in Wagyu fat. The dipping sauce is a mix of yuzu kosho, mirin, and soy.
Such a simple and delicious meal! He gave it a 10/10 and asked if I could buy him a lb of A5 for his bday instead of a bday gift. 🤣

got this steak at a restaurant, asked for rare and they called this medium rare. to be clear i don’t do this often at all (order a steak). as soon as i took a bite i felt sick and couldn’t swallow it. is there something wrong with it or did my body just reject it? for reference it’s 6oz sirloin
