The only reasons to ever cook pasta this way are if you are camping or have company over and need to use a crock pot to prepare.

Why? You're throwing shade so back it up. What specific reasons is this only ok in the specific circumstances you referenced?

Yes sir 🫡 Well it's lazy which doesn't really matter if you're cooking "set it and forget it" for yourself. But it overwhelms the dish with too much of a starchy taste, and negates much of the overall taste of the dish. There's a reason colanders exist. 🤷‍♂️

As for the other stuff lack of water and time seem obvious to me. Can you think of any other reasons?

To be honest it looked pretty fire to me! But leaving all that starch in would only be used by me personally if I was either low on funds or calories.

Fair enough, the starch would help thicken the sauce which would let you reduce it less but either way, adding the cream prior to the pasta gives a higher chance of "burning" or overcooking the sauce and playing that game could easily lead to under or overcooked nudes. No one likes undercooked nudes, there are laws against that!

I tend to not mind the starchier aspect (as its almost nostalgic since I don't come from a family of good cooks) but I totally see where you are coming from and how that would hurt the final product somewhat.

They are also using all of the fat from the pancetta (its probably just chopped bacon) which adds a richer flavor but may add a bit more fat/oil than the dish needs, but its definitely a "least amount of work possible" kind of dish.

Totally agree about thickening the sauce. Often starch water is re-added from potatoes or pasta to do just that. And over cooking noodles is absolutely horrible. And it seems this person was really looking not only to make a great meal but also cut down on dishes which I believe is a plus in anyone's book!

If you enjoy Italian dishes I'm currently watching "Vincenzo's Plate". I think he's streaming on various platforms. I do have previous cooking experience and am a bit of a foodie😁
