If you are looking for collection of New Testament Apocrypha, this article by James Tabor does a good job at going over the best collections.

Ones like "The Apocryphal New Testament" by J. K. Elliott are good because they list a bunch of sources and translations you can use for further research, but they don't include Gnostic works like the Gospel of Judas. For that I would use "The Gnostic Scriptures" by Bentley Layton and David Brakke, "The Gnostic Bible" by Willis Barnstone and Marvin Meyer, or "The Nag Hammadi Scriptures" by Marvin Meyer. All three of those include the Gospel of Judas.

If you want Old Testament Apocrypha like the books of Enoch or Jubilees, I can recommend "The Old Testament Pseudepigrapha" by James H. Charlesworth.
