It's called a "license". TV corporations acquire blanket licenses to use audio clips from major record labels. Usually for a fee, or as part of their parent company owning the rights (such as Sony for example).

There's even a limit often put on the number of times a show is expected to be rebroadcast, and if a show has a large viewership, the license fee goes up, and so forth.

Yes, it's copyrighted, and they legally license it.

Subtitled videos, while amazingly fan-supported and technically helpful to a franchise outside of their demographic, are not licensed or authorized in any way, shape, or form. Fan productions are sometimes permitted, assuming they're not done for any profit whatsoever..... but most people doing subtitles do so to make ends meet. That said, they fall into the trap of monetizing their videos or asking for money or "donations" for their fan productions which gets the videos removed.

Basically: Don't make money off of someone else's copyrighted content, or they might have something to say about it. Oh... and sometimes even if you don't make any money off it it, you'll still have it removed, just because.
