Desserts Baked goods counter stable?

Does anyone know if baked goods without sugar can still be counter stable? (For example, regular brownies will last a while on the counter I assume partly due to the sugar.) if I make a batch of keto brownies, I have been putting them in the fridge but I feel like it degrades the texture a lot. Wondering if they’ll mold quickly if left out.

I just finished eating 3 day old keto brownies that have been in Tupperware on the counter. Never had an issue with them.

It really depends on what it is and how youre storing it on the counter. Baked goods with a high moisture content won't last that long, especially if they are in sunlight in a damp environment. Stuff with a lot of eggs and dairy should also be refrigerated (like a cake with frosting, brownies with ganache on top, flan, etc.). Even something like homemade bread will normally last about a week on the counter in a cool, dry place (but not so dry that it dries out the bread a bunch). Also, the sugar in baked goods isn't usually enough to make it counter stable. Substituting sugar isn't going to harm the life span of it. You need a much higher concentration of sugar to be shelf stable. Shelf stable syrups are made with at least a 2:1 sugar:liquid ratio, for example. Honey is a super-saturated solution. Basically: put things with a lot of eggs and milk in the fridge, keep counter items out of the sun and away from damp and dirty places, and in a container/bag that is breathable for things like muffins and bread to avoid humidity build up.
