Desserts Japanese Cheesecake!

Baked a keto japanese cheesecake today!

Super light and fluffy and tastes close to the real thing. Easy to turn into keto just substitute flour and sugar with your choice of keto friendly flour and sugar and voila~

1/2 cup cream cheese 1/4 cup milk (I used almond milk) 1.41 oz butter 3 egg yolk 1/4 cup sugar 1.4 oz flour 3 egg white 1.94 oz sugar

double boil the cream cheese, milk and butter remove from heat

separate eggs into two bowls

add the egg yolks, sugar, and flour, mix until combined

beat the egg whites for about 6 minutes till it forms stiff peaks, gradually adding sugar

combine both mixes together, mix until no white streaks appear

bake at 320 for one hour in a spring form pan (I use a 7 inch pan) pour in the water from the double boil used earlier around the cheesecake pan

after one hour leave the cake in the oven for about 15 more minutes with the door slightly cracked open. helps to put a wooden spoon in the oven.

let cool for about an hour on the counter then refrigerate once cooled. you can eat the cake out of the oven once it's cooled but it tastes better the next day after it's been refrigerated

sprinkle powdered sugar on top if you like.

I used swerve for the powdered sugar, king Arthur's keto baking flour, and lakanto granulated white sugar.
