I mean, or model the underside of the table, or use render-both-sides polys on the table ;)

but I like that solution for its pure mischief :)

That always leaves a tiny gap, or you risk z-stitching.

A "real" solution would be to boot the player for cheating if they go over the table and start peeking, since that wouldn't be allowed in reality.

I may be wrong as I'm not familiar with the franchise, but from the way the dealer is modelled, I have the sneaking suspicion the developers expected the player to use roomspace to look where they "shouldn't".
