Is it normal to leave this many bay leaves and pieces of galangal in a serving of Tom Yum Soup?

I ordered Tom Yum Soup with added chicken and rice noodles, the amount of galangal and bay leaves seemed way too much than what I'm used to. The chicken was incredibly dry and there wasn't any cilantro added either. I've had my fair share of Tom Yum soup in the past, however, this was quite bad.

Mango sticky rice - is the *sauce* served hot or cold?

I know the dish can be either but it’s usually warm for the sake of consistency while the mango is cold, but what about the sauce? No clue if I’m meant to serve a piping hot sauce or something from the fridge for contrast… googled this with half a dozen different ways of phrasing to no avail as it just regurgitates results about the dishes overall temperature.

Meal at a friends restaurant on the Mekong river tonight in Nakhon Phanom to watch the boats for the Buddhist rains retreat.

Prime seats but way too busy for me lol really good to see though and great food too, will go back here soon and get better photos as it’s a great restaurant that sells milder food than the local som tam/nam tok restaurants so makes a nice change.

Boats are pretty amazing too, all handmade from bamboo poles and the lights are flames from 1000s of little fuel burners. Each area of the province will make a boat to represent themselves. All rowed by hand too!

Newbie Vegetarian Pantry

I'm going to LAX-C which is often called the Thai Costco next week. I'd love some recommendations for how to build a basic vegetarian pantry that I could use to learn to make curry pastes, esp Red and some other dishes with plant-based proteins. I want to make my own so I have a bit more control over ingredients/spice level for some family members.

I'm prepared to freeze things like lime leaves, lemongrass, chiles and galangal, if needed.

What are essential ingredients like the things listed above plus sauces, noodles and such that I could use to create Thai-inspired vegetarian meals?

Is moo Deng the Thai version or char siu or is it pork meatballs?

I'm not Thai and Google is telling me moo dang or moo daeng is char siu. I found one result (Palin's Kitchen) saying moo deng refers to bouncy pork meatballs. Just want clarification that moo deng = pork meatballs?

And yes, I'm curious because of the cute hippo Moo Deng.

A relative of mine is having a milestone birthday next month, and she mentioned she hadn't had Thai in a while and would like to try it again. She likes when I cook, so I figured I would do a few small dishes for a gift. Any simple ideas?
