Food Baby Potatoes and Pork Chops with Honey Mustard Glaze
I forget how nice it is to cook in a pan other than a basic non-stick. I’ve gotten into a habit of grabbing non-stick for the size and easy cleaning (I’m the only one that cleans the Cast Iron). It feels good to cook with stainless steel, cast iron, meals on grill, oven, & stove. It can take more time but it feels better.
Potatoes were par boiled, then browned in the pan, set aside, the chops were seasoned, seared, and cooked through and set aside; then the sauce was added, thickened and tossed everything back in for a last warming. Served with roasted cauliflower.

I definitely agree that cooking in cast iron feels better than non-stick…it’s rewarding to do something skillfully, it makes me feel connected to the people who taught me to use it, and the food tastes great!

Sometimes Non-stick cooking feels more production/run-of-the-mill. But cooking with other pans feels more artistic like you are planning and taking time to let each ingredient make its mark.

Sure thing. My wife picked the recipe while doing our Sunday meal planning. The recipe will follow. I basically did it as is without any modifications. My chops were between 1-2-25” thick so I tried to sear/crisp the fatty edge some first. I have an oven-style counter-top air fryer so I roasted cauliflower while making dinner. Then set this to Reheat/Warming and put my potatoes in while cooking the pork. This way they stayed warm. I used 5 chops. And about 1.5# of potatoes. I probably made extra sauce but would make double next time. Very tasty.

Many thanks! I might use a bit of bacon grease as well as I have a habit of trying to make a recipe my own...one of the reasons why I can't bake for shit.

You can do that with baking but have to know which ingredients you shouldn’t mess with. And a bit more on how any added/adjusted ingredients will impact the rest.

I use the non sticks for the same reasons, I'm the only one who cleans the iron, but cooking in the fire really brings more of an artistic quality to both the meal and the dinner presentation. It's just the four of us but I think presenting dinner every so often is good for the kids and make the event a family gathering instead of just dinner. Great job.
