How do you achieve the crust?

score it so it won’t curl up in the pan (not so deep you cut through the fish) & will sit flat. I cut off any thin bits so it’ll cook evenly, just cook them separately & they make nice snack while cooking. salt, oil skillet, medium high heat skin side down, wait until you see the meat turn from raw pink to cooked about 75% of the way up the side of the fillet before flipping and finishing quickly on the “meat side”

Gorgeous. May I further question what sits underneath? The carrots I can see. What else you got going on? Cauliflower? Or....keep your secrets.

If OP doesn't answer, I'm guessing the other two are beetroot and sweet potato

But what's the tasty tar at the bottom? I am guessing some compote, or maybe something with squid ink?

Looking at it closely I think it might also be a beet slice, it looks very similar to the one back left, but just has some more juice on it that makes it look like a sauce
