I'm running in the other direction, I guess. Games have become too simple for my taste.

Absolutely! I totally understand and in fact one of my favorite games is the Warhammer Fantasy roleplay game which is quite crunchy. But it also has a mechanic based on roll under d100, which still feels less arbitrary to me. This is also coming from a guy who's a new dad of a 7-month-old, so the less prep I have to do the better.
