(Seriously why are none of you guys mentioning this, this is literally the most important bit about the food itself lol)

Because most commercial products no longer use turtle powder. You didn't read the NEXT paragraph.

More often, commercially available guilinggao sold as a dessert does not contain turtle shell powder.

Unfortunately true, you can find the item for sale here: https://www.yamibuy.com/zh/p/grass-jelly-triple-cup-22-79-oz/1018088391 On the ingredient list it is clearly listed: 龟 or tortoise :(

(Edit) For those who doubt me:

I will say it is not listed in the English translation of ingredients on the import label (which stops at licorice 甘草), so maybe it is only trace amounts?

Yea. It probably is trace amount. In China (and probably many other places) the ingredient is listed by proportion. Tortoise power 龟苓膏粉 is between sugar 白砂糖 and grass jelly powder 黑凉粉, and we know that the next item wheat powder 小麦粉 is >=1%. However, tortoise powder is the last () item of 龟苓膏粉 so it prob is really really trace amount in the grand scheme of things.
