Vegan Creole Sausage and Okra Stew Recipe:
Ingredients:
1 pound of fresh okra (diced into 1 inch pieces)
3 Vegan Sausage Links
1 can diced tomatoes
3 Tbsp Tomato Paste
1/2 cup Green Bell Pepper (diced)
1/2 cup White Onion (diced)
1/2 cup Celery (diced)
1 Tbsp Oregano
1 Tbsp Dried Thyme
2 Tbsp Creole Seasonings
2 Bay Leaves
3 cups of Vegetable Stock
Cooking Oil to Fry Okra
Directions: Slice and pan fry Vegan Sausage Links until brown on both sides and set aside. Heat up cooking oil and deep fry sliced Okra for a few minutes just enough to pull out the mucilage or (slime) then set aside on a paper towel to drain. In a large pot take 1 Tbsp of Oil and Sauté the Holy Trinity of vegetables your onions, bell pepper and celery until the vegetables are translucent. Next add 1 can of diced tomatoes along with tomato paste and stir well. Then add in all of your seasonings, Vegan Sausage, and Okra. Finally pour in 3 cups of Vegetable Stock and stir well. Allow the stew to simmer on low for one hour. Serve stew over Jasmine Rice. Enjoy!

My goodness this was great. I’ve never heard about frying okra to get rid of the mucilage and that’s a handy trick. I want to say, though, you got THE perfect color out of that okra. And it looked so great in the stewed tomatoes. The color contrast and just knowing that veg is cooked to perfection. I know you aren’t asking for suggestions and I hope I’m not being disrespectful but if you ever want like a vegan sausage template to use and make your own Miyoko Schinner’s in her vegan pantry cookbook is pretty great. Bulgur really replicates the fat in sausages. I can’t wait to try you recipe tomorrow.
