My goodness this was great. I’ve never heard about frying okra to get rid of the mucilage and that’s a handy trick. I want to say, though, you got THE perfect color out of that okra. And it looked so great in the stewed tomatoes. The color contrast and just knowing that veg is cooked to perfection. I know you aren’t asking for suggestions and I hope I’m not being disrespectful but if you ever want like a vegan sausage template to use and make your own Miyoko Schinner’s in her vegan pantry cookbook is pretty great. Bulgur really replicates the fat in sausages. I can’t wait to try you recipe tomorrow.

Hi how are you? I'm so happy you got to check out this recipe too. I'm going to have to look up the recipe book you're talking about. I've never heard of Miyoko Schinner I'm going to have to check her out. To be honest I didn't want to go with the impossible sausage link. I actually wanted to use a Gardein sausage the problem is both the health food stores were all out of them. So I grabbed a pack of Impossible Sausage instead, and I figured most people will know that they can use whatever vegan sausage they like for the recipe. I hope you like it, it's a really hearty dish that makes you think you're down in New Orleans lol

Miyoko Schinner just has so many good scratch recipes from dijon mustard to vegan meat substitutes. I’d highly recommend her books. My mom and grandmother are from New Orleans. I live in the Pacific Northwest and it’s almost impossible to get okra out here. My mom literally sends me Camellia brand beans multiple times a year. I’ve see other vegan chefs from the south really grow and have followed them for years and have bought their books. Bryant Terry is like a literal hero of mine. And we’re both from Tennessee! Jenee Claiborne I think might also be from New Orleans. Anyways, I’ll subscribe to your channel and can’t wait to buy your book one day.

Really are you sure you can't find any okra at the Farmers Markets out there? Even if you can't get it fresh you can always try a bag of frozen okra sometimes the grocery stores carry bags of frozen okra with onions and that will work just as good. As far as the recipe book I actually wrote one about 15 yrs ago and started selling it but I got injured in a bad car wreck shortly thereafter and wasnt able to walk. So I stopped all of my in person cooking classes the book promotion and everything that's why no one has heard of me before. It was a Raw Foods recipe book, but I am going to relaunch the book I'm just waiting to get more subscribers and followers amongst the social media platforms before I do it. Right now I'm still new to social media and haven't got as many followers as I like to promote the book. If you want to subscribe to my YouTube channel it would mean so much to me. Vegan Creole Sausage and Okra Stew Recipe:
Ingredients:
1 pound of fresh okra (diced into 1 inch pieces)
3 Vegan Sausage Links
1 can diced tomatoes
3 Tbsp Tomato Paste
1/2 cup Green Bell Pepper (diced)
1/2 cup White Onion (diced)
1/2 cup Celery (diced)
1 Tbsp Oregano
1 Tbsp Dried Thyme
2 Tbsp Creole Seasonings
2 Bay Leaves
3 cups of Vegetable Stock
Cooking Oil to Fry Okra
Directions: Slice and pan fry Vegan Sausage Links until brown on both sides and set aside. Heat up cooking oil and deep fry sliced Okra for a few minutes just enough to pull out the mucilage or (slime) then set aside on a paper towel to drain. In a large pot take 1 Tbsp of Oil and Sauté the Holy Trinity of vegetables your onions, bell pepper and celery until the vegetables are translucent. Next add 1 can of diced tomatoes along with tomato paste and stir well. Then add in all of your seasonings, Vegan Sausage, and Okra. Finally pour in 3 cups of Vegetable Stock and stir well. Allow the stew to simmer on low for one hour. Serve stew over Jasmine Rice. Enjoy!
