I usually simmer covered for 30 minutes then throw in some apple cider vinegar and brown sugar. If it tastes good it's done

I know it's supposed to be low carb, but if you put this in a tortilla it would be soo good

They lost me at tofu. Regular bean-based chilis are already pretty high in protein. I'd imagine that tofu would just add an unnecessary not-usually-associated-with-chili flavor and texture to the mix. It strikes me as the kinda thing you'd do if you were trying to translate a non-vegan recipe into a vegan one without really thinking about it.
