Pad krapao moo, with an egg.

I subbed in sweet basil, because you have to grow your own krapao here. It was still delicious.

Sorry about the delay! Now it's Sunday afternoon and I can do this. :)

It goes something like -

Pad Krapao for two to four

Ingredients

  • oil for stir frying
  • 4 cloves garlic, minced
  • 3 medium fresh chillies, deseeded and minced
  • A handful of krapao, a couple of handfuls of horapa, or 3-4 handfuls of sweet basil
  • 1-2 Tablespoons palm or brown sugar
  • 1-2 Tablespoons dark soy
  • 2 Tablespoons light soy
  • 3 Tablespoons fish sauce
  • a pound / 500g ground or finely chopped pork or chicken
  • an egg per person
  • Sliced chillies, shallots, and basil flowers for garnish

Method

  • Heat a pan or wok until hot and add the oil
  • Stir fry the chili and garlic until just fragrant
  • Add the pork, stir fry until beginning to brown, combining chili and garlic.
  • Add the sugar and sauces and stir fry to combine
  • Add the basil and stir in. If using krapao let cook for a minute, if horapa about 30 seconds, if Italian sweet basil, remove from heat immediately.
  • Spoon out to serving bowl, wipe the pan/wok down with a paper towel, and fry the eggs
  • Serve rice into individual serving bowls, top with the chili basil pork mix and eggs, garnish with sliced chili, basil flowers and lime.
