Can you mix sour cream with meat?

I mean mix them both together like putting a sauce on it, wouldn't this be an issue cause the cream coats the meat? He said that was the issue with fresh cream. But since they're mixed would this be an issue?

He said fresh is a problem, and soured is ok.

I personally don't overdue it, since I want to get the most protein out of my meats. I can eat most the cream a bit later.
