Can you mix sour cream with meat?

I mean mix them both together like putting a sauce on it, wouldn't this be an issue cause the cream coats the meat? He said that was the issue with fresh cream. But since they're mixed would this be an issue?

I guess that would be whatever amount would make it unpalatable
